1. Firstly, never leave the grill unattended, whether you have step inside to grab a plate or frosty beverage. Have all that out with you when you start. 2. You can avoid burning your sausages and patties by remembering not to cook meat which has come straight from the refrigerator. If your meat is warm in the middle before it goes onto the fire then you are less likely to burn it.
3. We all love that charcoal taste on our meat so make sure your BBQ is very hot before you put your meat on it.
4. Try not to poke and prod your meat too much otherwise you won’t be able to get that tasty caramelised crust. Only turn the meat once or twice and make sure you do not squash everything down as this forces the juices to run out and leaves you with very dry meat.
