Big Papa’s Country Kitchen

The BBQ was submitted, tasted, and judged, weighed and measured!  At the end of the day, it was our friend Matt Barber and his Hot Wachula’s BBQ Team and Dana Hillis of Big Papa’s Country Kitchen who took top honors at the 2011 Planes, Trains & BBQ competition in beautiful Tavares, Florida.

About Matt Barber and the Hot Wachula’s BBQ Team

For those of you who don’t know Matt, he’s a heck of a guy.  I’ve had the chance to meet and speak with him numerous times now, and he’s as open and friendly as I’ve come to expect from folks on the Florida Bar-B-Que Association circuit.  I’ve written a few posts about Matt Barber and Hot Wachula’s and the events they’ve attended.  One of which showcased the Hot Wachula’s “vintage” BBQ Smoker – which you need to see, as it represents one hell of a piece of living BBQ history!

One thing I respect about Matt is that, as is the case with Terry McKay of Git R Smoked BBQ, Matt and Hot Wachula’s BBQ is pretty much a one man show.  At the 2011 Pig on the Pond event, Matty was there with an EZ-Up tent, a couple of tables, some coolers his smoker and a lawn chair.  No big rig, no 5th wheel trailer.  While he came in 12th overall at the Pig on the Pond event, Matt is always a contender to walk for sure.  My favorite story from this year where Matt is concerned is when he had borrow a ride… and a BBQ cooker… for the 2011 Punta Gorda BBQ & Music Festival and still wound up finished 3rd overall – with an 8th place finish in chicken, 6th place walk in ribs, 1st place finish in pork, and a 1oth place price in brisket.  Very cool.

About Dana Hillis and the Big Papa’s Country Kitchen

To say that Dana Hillis and the Big Papa’s Country Kitchen BBQ team are a fixture among the Florida Bar-B-Que circuit crowd – and nationally, for that matter, would be an understatement.  Big Papa’s Country Kitchen wins.  It’s just that simple.  And when they vend an event… you bet your butt you’ll see lines forming 10 folks deep from the start to finish of a given contest.

The 2011 Palm Beach Grillin in the Gardens wrapped up yesterday with the Divine Swine BBQ Team and Git R Smoked taking Grand Champion and Reserve Grand Champion honors, respectively.   41 Pro Division Teams competed in this Florida Bar-B-Que Association sanctioned event, with 100 percent FBA certified judges letting their taste buds to the ranking.

Aligning with the charitable spirit of nearly every BBQ Cook Off in the nation, the Palm Beach Grillin in the Gardens event is held to raise funds for the Big Heart Brigade.  This is a great organization in South Florida that regularly feeds holiday dinners to tens of thousands of folks who would otherwise go without – making it a fitting beneficiary for a BBQ event, don’t you think?  Connect with the Big Heart Brigade Facebook Page and lend them your support if you can.

I was sorry not to be able to make it down for this year’s event, but several of our friends here on the BBQ Smoker Site were.  It was great to see Terry McKay of the Git R Smoked BBQ Team pull another win – with the Reserve Grand Championship prize coming in just .33 points behind Grand Champion Divine Swine BBQ.

As usual, Terry’s Brisket whomped the field  - taking 1st place, and his Pork came in a close 2nd.  For those of you who have not met Terry, he’s literally a one man show at these events.  Let me restate this… it’s him, and only him working on his cook at all or nearly all of these cook offs.  I see many teams with five or more folks prepping and monitoring the chicken, pork, ribs, and brisket cooked at most BBQ Cook Offs I attend.  Terry does it all by himself… and he’s winning!

At present, Terry McKay’s Git R Smoked BBQ Team is at 1st place in the Florida Bar-B-Que Association Team of the Year race with a score of 213, with the 2nd place spot being held by Pig Papa’s Country Kitchen with a score of 155.
