It’s been a little while, but I’m happy to present you all with a new addition to our BBQ recipes archive from The Dutchess! This time, she’s done BBQ Chicken on the Weber Grill. Looks amazing, as I’m sure you’ll agree!
BBQ Chicken on the Weber Grill
Finally, a new recipe from the Dutchess! Life is so busy nowadays, and it’s getting busier day by day! Finally, I found the time to work up a new recipe for this awesome BBQ Smoker website.
I’m a “fair weather griller,” as you know… because I just hate to work outside in the rain and wind and hail and thunder…that’s not my style! It’s about time I start thinking about making some sort of sheltered place in the garden so I won’t have to worry about that anymore. Apparently there must have been some good days because take a look at this… isn’t she a beauty?
I’ve made a smoked chicken before, but this one isn’t smoked, it only went on the Weber grill at a low temperature and was more roasted. It tasted so good! And no, that was not only because I used Bourbon in the marinade and for the basting. Come on now… what else would you expect from a tried and true BarBQBoozer girl?
I used a whole package of the marinade, and since I like my chicken to be a little on the hot and spicy side, I added extra hot sauce to it. The amount I give you in the recipe below puts you at medium heat, so adjust it to your own preference.
For me, a whole chicken on the barbeque is the easiest way to prepare an awesome meal. Just keep the temperature on the low side and the chicken away from the hot coals and nothing can go wrong!
For this recipe I made a marinade of:
- ½ cup Bourbon
- ¼ cup dark brown sugar
- ¼ cup of your favorite BBQ sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon mustard powder
- 1 tablespoon Hot Sauce (you use the amount you can handle!)
You’ll want to set some of this marinade aside for basting the chicken. For the bit you’ll use as marinade, mix these ingredients together in a large plastic zip lock bag - big enough to put the whole chicken in. Once it’s in and the bag is sealed up, give the chicken a good rub, and place it in the fridge to marinate over night.
The next day, pour the marinade you set aside for basting into a small pan and bring it to a boil. Keep it on a medium heat for a few minutes. Strain it and pour the liquid in a bowl or jar. Add another ¼ cup of Bourbon to the liquid. Now you have a great bourbon based BBQ marinade!
Prepare your Weber grill for indirect grilling (with coals on only one side of the kettle). I grilled this chicken at a temperature between 225F-250F, and basted it four times during the cook. You can see the stages of the cooking process here and can tell that it looks better with every shot!

Oh yes and before I forget, I did put the chicken on the grill upside down. That way the juices can go all the way down into the (sometimes dry)breast meat and it works!!
I hope you’ll enjoy this version, I sure did! You know me by now… I’ll keep on trying new recipes time after time, so don’t be surprised if another version of Bourbon Chicken shows up again! Darn, have to go buy more bourbon!
