I’m up in Salisbury, NC visiting my Dad and as is custom, we headed over to Hendrix BBQ for some of their awesome pulled pork. For those who might not know, the Carolinas are all about the pork. Now, Hendrix does a bang up job on BBQ chicken, but the PIG is where it’s at here, and there’s no denying that they have pulled pork down to a tasty tasty science.

As you can see from the photo above, the folks at Hendrix BBQ don’t play when it comes to piling on the pulled pork goodness. What you see here is a plate stacked high will Carolina red slaw (using a red vinegar base rather than mayonnaise), fries, and some of the best pulled pork I’ve tasted in some time. Nearly zero fat, it’s clear that they take great care to trim and hand pull the meat here, and it makes all the difference in the world. The flavor of the pork on this plate was rich, with a medium smoky profile, and required no saucing at all as it was plenty moist. I’d give it top marks on taste, texture, and tenderness, no question.
I did try some of the sauce Hendrix served up in Styrofoam cups, and it was great. True to the Carolinas, the sauce at Hendrix BBQ is thin and vinegar based. It had a nice mild spice taste to it, which added some kick to the pork. Though, I did end up eating most of the pork sauce free, as it seemed a shame to lose the original taste.
If you get to the Charlotte, NC area, and can make the hour or so trek out to Salisbury, definitely give Hendrix BBQ a try. They have two locations, and from what I’ve heard the quality is great at both.

Grilling season is here, and while this site deals a lot with charcoal fired grilling and BBQ Smokers, I wanted to provide some information on some of the bestselling propane grills for those relegated to or who might prefer using them. We live in a 2nd floor condo. As such, we can only use propane. I’m not actually sure we can use propane per our HOA regs, but I’ve been cooking on our propane grill for some time now, and no one has reported me! I am most interested in taking a closer look at the Char Broil Patio Bistro Infrared Gas Grill, as infrared grilling technology – typically used in higher end restaurants – has become pretty affordable for home cooks these days. Take a look at these grills and see what you think.
