4th of July BBQ Recipes - Sam Dog's Corn Bread Salad LogoI’m starting up a 4th of July BBQ recipes archive and thought it would be nice to feature July 4th BBQ recipes from some of my favorite BBQ folks.

4th of July BBQ recipes are plentiful, but I wanted to collect some that edge outside the box a bit.  After all, we can only eat so many baked beans and so much slaw!  So, I sent some feelers out yesterday, and was very pleased to see that Greg Talley with Sam Dog Barbeque stepped right up and garnered first posting honors!

When you think of 4th of July BBQ recipes, the events where they are to be found likely present  hamburgers, hot dogs, coleslaw, baked beans, and the like.  I love each of these and have since I was a kid.  But now, my palate craves something more, something different, something that says warm golden love with veggies and bacon.  Something like this Corn Bread Salad!

Check out and try this 4th of July BBQ Recipe idea: Corn Bread Salad.  I know it’s a favorite of Greg’s and bet that it will be one of yours as well.

Sam Dog’s Corn Bread Salad 4th of July BBQ Recipe

Ingredients

  • 4 1/2 cups of crumbled cornbread (from a fresh baked loaf, cooled)
  • 0.4 oz (1 package) envelope of dry ranch style salad dressing
  • 1 cup of sour cream
  • 1 cup of mayonnaise
  • 16 oz. of black beans or pinto beans, drained
  • 3/4 cup of finely chopped sweet onion
  • 1 cup of chopped green bell pepper
  • 1 cup of chopped red bell pepper
  • 3 large red ripe tomatoes, chopped
  • 2 cups frozen corn kernels, thawed (may use canned in a pinch)
  • 12 slices bacon, cooked crisp and crumbled (Greg says he always cooks up a whole package, makes a BLT or two and uses the remainder in the salad)
  • 2 cups of shredded cheddar cheese

Assembly Instructions

  • Cook cornbread, cool and crumble.
  • Mix the salad dressing mix, mayo, and sour cream in a small bowl and set it aside
  • In a large bowl, mix together the beans, corn, onions, peppers, tomatoes, bacon, and cornbread
  • Mix in the combined ingredients from the small bowl into the large bowl
  • Spread the mix evenly and cover with the cheese
  • Salt and pepper to taste
  • Refrigerate until cool and serve
  • Makes about 8-10 servings

Editorial Note: I’m guessing you can mix in a trinity of green, yellow, and red bell pepper to this dish.  I’d even be temped to throw in some Chipotle or jalapeño peppers!
