We’re fast approaching the 4th of July Holiday and as such, we’ve been getting in a lot of great 4th of July BBQ Recipes from our friends in BBQ land.  If good quality sides and dishes to share with family this 4th of July aren’t your thing, well… you’ll likely want to steer clear of the BBQ Smoker site for a bit.  Cause we love ‘em!

4th of July BBQ Recipes - Doomer's Q Sauce Logo

This entry into our 4th of July BBQ Recipes archive comes from Mr. Todd Dooms, Co-Owner and Founder of Doomer’s Q Sauce. You’ll remember an awesome guest post review of Doomer’s Q Sauce on our site from Mr. Brian Meagher of Hot Sauce Daily.

Well, Todd was kind enough to share a cold corn, bean, and rice medley he likes to serve as a side dish to his friend and family at cookouts.

4th of July BBQ Recipes - Corn, Bean, and Rice Salad

Folks, this ain’t  your grandma’s cold corn and bean salad…  unless of course her name is “Grandma Awesome!”   Print this one out and have it ready for your 4th of July BBQ cookout.  Your guests will be on you for the recipe faster than Dorsey Odell of Team Unknown BBQ gets on a mess of Possum Sushi.  Can I get a come ‘on?

Todd Doomer’s Cold Corn, Bean, and Rice Medley

This is a two part process, with the rice prepared first, followed by the corn and beans.

Part 1: Ingredients for the Rice

  • 4 cups chicken stock
  • 2 cups white rice
  • 1 T fresh diced thyme
  • 1 T fresh diced parsley
  • 1 t lemon juice
  • 1 t lime juice

Preparation

Bring stock to a boil in saucepan, reduce heat, add rice & simmer 20 minutes.

Meanwhile, in a medium bowl combine remaining ingredients. Once rice is cooked, add to bowl and combine ingredients. Chill in fridge about 2 hours.

While that is chilling, begin work on part 2.

Part 2: Ingredients for the Corn and Bean Salad

  • 2 15 oz cans sweet golden corn – drained
  • 1 15 oz can kidney beans – drained and rinsed
  • 1 15 oz can black beans – drained and rinsed
  • 2 med tomatoes – diced
  • 1/2 sm onion diced
  • 1 t minced garlic
  • 2 T cider vinegar
  • 1 1/2 T kosher or sea salt
  • 1 T olive oil
  • 1 t fresh ground black pepper
  • 1-2 T of your favorite bbq sauce (We use Original Doomer’s “Q” Sauce)

Preparation

In a large bowl, combine all ingredients. Cover and refrigerate about 2 hours.  Now combine the two chilled bowls and mix thoroughly, and enjoy!
